Vineyard Notes: All grapes are sourced from several estate parcels on Vouvray's esteemed Premiere Côte. All grapes harvested by hand. Noel Pinguet was one of the first French vignerons to adopt biodynamic viticulture and credit biodynamics with enhancing the personalities of the estate's terroirs.

Winemaking Notes: The wine is bottled before primary fermentation is finished, resulting in a lower pressure sparkling wine - pétillant - because only a portion of the fermentation occurs inside the bottle. Yeast is added to ensure the fermentation progresses smoothly. Once finished the wine is disgorged. Dosage is 10 g/l and is made up of cane sugar and demi-sec or moelleux wines from a previous vintage.

Tasting Notes: Pétillant Brut is crisp and minerally yet has a lovely bouquet of flowers, ripe pear and sweet spices. Pure and polished with great acidity and delicate bubbles. This wine would undoubtedly put a good number of Champagnes to shame. The bubbles are small and perfect. It's a terrific bottle to keep on hand for any occasion.

Honest and pure sparkling wine. Peppery and herbal, with notes of fresh cut grass, lemon curd, and lots of pretty green and yellow apple notes throughout. Crisp, clean, fruity, and delicious. Aged minimum of 3 years on lees, disgorged summer 2019.
