In 1967, Niida-Honke began producing its all natural Kinpou line using 100% Shizenmai rice, cultivated on their 600-acre property without the use of any pesticides or chemical fertilizers. By 2009, 98% of the rice utilized by Niida-Honke was Shizenmai rice.

Tasting Notes: Honeydew melon and lemon zest create a fruity yet clean and delicate set of aromas. This sake is gentle and elegant on the palate with flavors of ripe golden apple and tart pear skin. You can taste the rice in the sake: it is clean and rounded and full of umami. The savoriness blossoms on the finish alongside firm minerality. Pair with sautéed fish with miso, grilled asparagus, Camembert cheese, summer rolls.

"This Natural producer uses no pesticides, fertilizer, or chemicals in the production of his sake. Biodynamic since 1967, they have some rice fields that the only fertilizer is mulch from the previous year’s harvest. He uses tiny shrimp in the rice field to aerate the soil.
