Koshi No Iso Brewery was founded in 1909 along the ocean coast of Echizen in the Fukui Prefecture. To this day, Koshi No Iso is a small batch, family operated brewery.
Post WWII, the brewery was relocated approximately 30 kilometers inland. Founded in an area bountiful with seafood from the Sea of Japan, much of Koshi No Iso’s flavor profile reflects the terroir of a coastal village. The brewery focuses on non-fortified pure rice sake.
In 1998, the brewery began beer production efforts focused on using only locally sourced Fukui Prefecture malt and applying sake brewing principles such as non-charcoal filtration to its production.
