Founded in 1849, the Shimazaki Brewery brand Azuma Rikishi was created after the second generation’s favorite sport: sumo. Taking inspiration from the formidable term rikishi whose kanji symbolizes “gentleman of strength,” the brand’s ethos is to sufficiently draw out the umami inherent in rice to create a hearty brew.
Shimazaki Brewery utilizes an old WWII tank-building cave for sake storage. They acquired the cave in 1970 and started making long-term aged sake. They are now seen as a leading brewer of long-term aged sake.
