Vineyard Notes: The grapes come from the Istine estate vineyard Casanova dell’Aia in Radda in Chianti, the first parcel that the family bought and planted in the 1980s and then renewed in 2014. The vineyard is 0.2 hectares. Harvest is manual. Grapes are picked during different passes, according to the maturation of the vines and varieties.

Winemaking Notes: The grapes spend 3 days macerating with the skins in stainless steel tanks. Then the wine ferments and ages in terracotta amphorae as well as a small part stays in stainless steel tanks. Batonnage is carried out until the end of December to keep the fine lees in suspension with the juice. The wine does not undergo malolactic fermentation. The wine is assembled in stainless steel tanks where it rests for a short period before being bottled.

Bottle Note: This wine is bottled in a transparent glass Burgundy bottle with a screw cap. This allows reducing the use of sulfites needed to slow the aging process of the wine, and in turn, keeping it fresher for a longer time.
