OneTen Purple is named after famed kabuki actor Hyakujyuro, who once donated 1,200 cherry blossom trees to Kakamigahara City. This yamahai junmai ginjyo is vibrant and ricey with a moderate body that slightly lingers.
Tasting Notes: Smells of soy bean, tofu, coffee grounds, egg white, toasted sesame seeds, hemp, and baked pear. Tastes of green vegetable (asparagus), brown rice, soy sauce, and tofu. This is a refined Junmai Ginjyo with grainy splendor.
Milling: 60%

"Reiko Hayashi is the single mother one-woman brewmaster and fifth generation owner of this brewery. Her strength shows in her sake. She uses the term 'Sakedelic' (how cool is that) to describe the unique taste that Yamahai style gives sake. Purple denotes the deep flavors and rich elements noted in this sake. Layers of flavors develop on the palate of melon and plum, notes of rich rice, and bold acidity provide depth to the umami. Pair with spices, and stone fruit. Even a turkey dinner.”
