Tasting Notes: Chop Shop is a California Cabernet Sauvignon ready to be enjoyed any night of the week with everything from pizza to hamburgers to steak, and it is equally as great on its own. A blend of Lodi and Clarksburg AVAs, this crowd-pleasing style has complex flavors of black cherry, leather and tobacco balanced by hints of cocoa and violet. A touch of Petit Verdot and Cabernet Franc add some dark, complex nuances to this otherwise juicy Cabernet Sauvignon. This is a red wine that is friendly and versatile, with underlining masculinity and structure.

Winemaking Notes: The grapes were harvested at night to make sure they were as cold as possible upon reaching the winery. Fermentation occurred in stainless steel. Aging occurred in a combination of stainless steel and oak (40% new French and American) to give the final product structure and subtle undertones of pepper and earth.
