Tasting Notes: Subtle aromas of spring flowers, yellow apple, and ripe pear overlaid with a savory beeswax note make way for a palate that is smooth and plush. Tasting of white peach, tart yellow apple, and sweet lemons, completed by a long, polished and vibrant finish. As the wine has a good amount of Semillon in the blend, it will age and improve over the next 5 years. The great white wines of Pessac-Léognan in Bordeaux (Château Smith Haut Lafitte, Château Latour-Martillac, and Château Carbonnieux) are the templates for this wine.

Pairing Suggestions: If you find basil, lime, avocado or garlic in your dish, then Wyncroft Shou Blanc will be a lovely match in your glass. Or pair the white wine with fall vegetables such as cauliflower, or seafood – think scallops.

Winemaking Notes: The Sauvignon Blanc fermented in a temperature controlled stainless steel tank as was the Semillon. After fermentation, half of the Semillon was put in an Acacia wood barrel. Acacia adds body and texture with a very subtle note of hazelnut. The Semillon acts like Merlot does with Cabernet Sauvignon. It softens the rather austere acidic nature of Sauvignon Blanc and adds a silky fat middle palate to the wine. Additionally, the high proportion of Semillon adds ageability to the wine.
