The infamous Swick 'Only Zuul' Macerated White is now available in Chicago!
Vineyard Notes: 50% Pinot Gris from Finnigan Hill Vineyard in Chehalem Mountains; planted 2007 at 1,000 feet and 50% Gewurztraminer from Lacewing Vineyard in Columbia Gorge; planted 1968 at 1,600 feet
Winemaking Notes: The grapes fermented with native yeast and spent 60 days on their skins. Each grape vinified separately and then was gently pressed into a mix of 228-liter and 500-liter barrels along with two 700-liter concrete eggs (one for each variety). The wine aged for 10 months. Sulfites were added only at bottling.
Tasting Notes: 2022 is right on par with the 2021 version. Longer maceration smoothed out the tannins for the 2022 version. The concrete eggs added more precision and edge to the wine. Aromas include grapefruit, lychee, and rose petals. The palate is fresh and weighty. Serve chilled.
