Winemaker Notes: "I fell for Grüner in the very early days of my wine journey. Reason being, this grape can do it all...from sparkling to sweet, with many possible variations along the way. One of my favorite characteristics of this grape is how absolutely savory it can be. Chicken stock, white pepper, haricots verts, pea shoots...these are all potentials with this grape. So, naturally, we turn it up to 11 by skin fermenting it. This is all of those things, almost absurdly so, with a slice of green apple and beguiling iris flower." - Evan Lewandowski
Winemaking Notes: The Grüner Veltliner was underwent whole cluster skin maceration during fermentation for 7-10 days. Fermentation was spontaneous with no temperature control or aids of any sort. The wine underwent full native malolactic conversion. It matured for 5 months on the lees with one racking prior to blending and bottling. No sulfites were added at any point.
