Vineyard Notes: This is a single village wine produced from the best sites in the premier cru village Rilly-la-Montagne. The Pinot Noir vines are around 36 years old and come from Les Sablons lieu-dit.
Winemaking Notes: 2017 is the forth vintage of this wine. The grapes ferment slowly in oak barrels with native yeast. The wine ages on its lees. To balance the richness and depth with bright acidity, Raphaël and Vincent make certain that the wine does not go through malolactic. Second fermentation occurs in bottle under cork instead of crown cap. The wine ages for +36 months in the cellar before release. Dosage is low, around 3 g/L.
