Vineyard Notes: Contrada Cavaliere is on the southwest side of Mount Etna, within the municipality of Santa Maria Licodia. This contrada is known for its high elevation (2,950-3,100 feet), low rainfall rate, and abundant luminosity. Generally, the southern slopes are geologically younger, thanks to the formation of soils on relatively recent lava flows. However, this contrada occupies outcroppings with soils that are far older, the evolution of which has generated rather fine but complex soils. The vineyard floor has considerable physicochemical and biological fertility that benefits from a warmer and drier climate that is not tempered by sea breezes. The diurnal shift in temperature is dramatic at Contrada Cavaliere and helps in producing wines with with well-marked aromas and varietal structure. View Map
Winemaking Notes: Following the manual harvest around mid-October, the grapes are fully destemmed in the cellar, where fermentation with maceration takes place in stainless steel at a controlled temperature over approximately 21 days, using only indigenous Etna yeasts selected by the winery after a long direct experimentation. The wine matures in French oak tonneaux for 12 months and then in stainless steel tanks. It rests in bottle for about 10 months before release.
Tasting Notes: On the nose, aromas of red fruit merge with warming herbs and spices. The palate is dry, medium- to full-bodied and structured with ripe tannins and a persistent, harmonious finish. The Contrada Cavaliere Rosso is particularly suitable for red meats, game, and aged cheeses.
