Fortis Maelumn is a dry cider made with a deep respect for the traditions of Old World cider. It is a blend of 6 heritage and heirloom apple varieties.
Apple Varieties: Brown Snout, Porter's Perfection, Wickson, Binet Rouge, Golden Russet, and Esopus Spitzenberg.
Production Notes: The varieties were co-fermented with a combination of chosen and wild yeast to create a deeply complex hard cider with soul. No sulfites were added. The cider was bottle conditioned and unfiltered.
A Note on Sulfites: Left Foot Charley is not trying to be hip or follow the latest trends in cidermaking. In fact, they have no issue with sensible SO2 use and had the labels printed with "contains sulfites" assuming they would add them. But in this cider they saw an opportunity to let the fermentation finally subside in the bottle. Because of this, they felt that SO2 might impede this final stage. This means the cider is alive and should be kept cool lest any opportunistic anarchist bacteria decide to rise in revolt.
