Terroir Notes: This wine highlights Pinot Meunier's complexity and nuances. The Pinot Meunier is sourced from Chavot. The plots were planted in 1953, 1958, and 1965. Clay and silty soils are not very deep and have little stones and chalky subsoil. Vines are farmed biodynamically.

Winemaking Notes: The grapes are manually harvested when fully ripe. The grapes are destemmed and macerate with the skins for 12 to 14 hours. Alcoholic fermentation occurs with natural yeast in barrels. Malolactic fermentation does not occur. The wine ages for 6 months on the lees. It is disgorged by hand. Dosage is between 2 and 4 g/L.

"Laherte’s NV (2015) Extra Brut Rosé de Saignée Les Baudiers VV is 100% Meunier from vines planted in 1953, 1958 and 1965. Creamy and resonant on the palate, with tremendous aromatic depth, the Beaudiers is flat-out gorgeous. Sweet red cherry, mint, kirsch, game and dried herbs infuse the 2015 with myriad layers of complexity that reveal themselves with time in the glass. The 2015 spent two years in barrel prior to bottling, which is long by Champagne standards. More importantly, though, it is a wine of tremendous personality and pure breeding. Dosage: 3 gr/L.
