Fruit Source: SantYuste is made from ungrafted Verdejo vines aged 100+ years old. This is a composite of four vineyard sites that display the possibilities of the village of SantYuste.
Vinification: SantYuste is naturally fermented with indigenous yeast in stainless steel. The fruit is a mix of whole clusters and destemmed berries. Maceration lasts between 36 and 48 hours. The Verdejo ages on its lees for four months. No sulfites or any other additives are used during the entire vinification process.
Tasting Notes: This 100% Verdejo that is reminiscent of Vouvray Chenin Blanc in a way; it has ripe fruit and a dark straw color. It acts a little like it too with round fruit on the palate and jutting, beautifully penetrating acidity. This is an extremely versatile food wine. Raw, braised, light or heavy, this wine has your back!
