Winemaking Notes: The Moscato is softly pressed in a pneumatic press. The juice is cold macerated to reduce fermentation while extracting aromatics. It is filtered and then put into a special tank that retains the carbon dioxide while heating the product to a temperature of 15°C. The purpose of this procedure is to favor the fermentation process, which will reach 5% volume of alcohol. The wine is cooled to stop fermentation.

Tasting Notes: La Caliera Moscato d'Asti is a high-altitude Moscato d'Asti. The bubbles are extremely soft and velvety. The sweetness is not cloying but well integrated with the wonderful candied fruit and flower (violet, acacia) flavors. Try this with Key lime pie; it is a perfect pairing.
