Winemaking Notes: This rare and very special wine, made exclusively from Sagrantino, is manually harvested late and left to raisin on mats for four months. As it air dries, a white mold forms that balances and concentrates the acid, sugar, and tannins. The grapes, as raisins, contain approximately 30% sugar at this point (January of the following year) and they are then de-stemmed and crushed. Fermentation begins spontaneously and slowly progresses until the sugar level reaches 16% to 18%. Pressing then takes place and the resulting wine carries approximately 90 grams of residual sugar. The wine is then aged in stainless steel for four years or more. Unfined and unfiltererd, it is bottled and then aged an extra year prior to its commercial release. The Sagrantino Passito is not produced every year and, when it is made, only 1,000 to 2,000 half bottles are produced. Each bottle is numbered on the label.

Tasting Notes: A nose of peppery, stewed berries, cherries, and minty, dried oregano will reawaken your senses after a big, heavy meal. Wonderfully bright, while it boasts 90 grams of RS and a surprising amount of tannin, the complexity of fruit combined with the alluring umami of old leather and dried tobacco leaf will leave you wanting seconds, even when your belly is full. A spectacularly special wine.

Pair with chocolate ice cream and call it a fantastic night. Also pairs well with creamy sheep's milk cheese, fig jam, and Marcona almonds.
