Vineyard Notes: Matthew Rorick farms one of the most compelling sites in all of California, Rorick Heritage Vineyard in Calaveras at around 2,000 feet. High altitude, super unique soils (sandy loam with limestone), and steep slopes produce extremely particular fruit. Tinta Roriz (aka, Tempranillo) from RHV is picked and direct pressed to form the delicate, spicy, and snappy strawberry component for this wine.
Fox Hill Vineyard is planted almost entirely to Italian varieties. The Portuguese block is the exception. Souzão and Touriga Nacional are both primarily relegated to the production of fortified wine, both here and back home in Portugal. But Evan Lewandowski has found success in bringing these two meaty, herbal, tannic, and intensely colored varieties to life as a savory, earthy, and structured version of pink wine.
Winemaking Notes: The Tinta Roriz (Tempranillo) was whole cluster bladder pressed (no skin contact). The Souzão and Touriga Nacional were foot trodden and then bladder pressed post a 2-hour maceration. Fermentation was spontaneous with native yeast and no temperature control. The wine underwent full native malolactic conversion. It spent 5 months on lees with one racking. It was bottled unfined and unfiltered. Two components received a 20ppm SO2 addition after malolactic fermentation. Total perceivable SO2 equaled ~5ppm.
