Winemaking Notes: The grapes are gently crushed and then dropped into 1.5 ton bins for 24-72 hours of cold soaking. The Cabernet Franc is then inoculated with a variety of yeasts, hand-punched, and pressed directly to barrel where the wine finishes both primary and secondary fermentation. The individual lots of wine that comprise the Cabernet Franc are kept separate for at least one year before they are blended.

Cooperage: 25% new premier French oak, 30% once filled premier French oak and the remaining in 2nd fill or older French oak

Tasting Notes: The 2019 Cabernet Franc has a concentrated and inviting fruit-forward nose, with aromas of tart cranberry and dark cherry as sell as a subtle herbal note. The palate has a pleasing and balanced acidity, with darker fruit than the nose, followed by hints of cedar, baking spices and milk chocolate and smooth tannins on the finish.

Soft and approachable enough to be consumed right now, the 2019 Cabernet Franc by Tamarack shows pretty red florals that combine with black currant and tilled soil flavors on the palate. Enjoy over the next five to seven years.
