Tasting Notes: This thirst-quenching blend tastes like a margarita and a light white wine went on a date and got a tamari glazed dulce de leche for dessert. Lively aromas of grapefruit oil and salty clay mingle for a slightly spritzed sipper that meets you where you’re at.
Pairing Notes: Enjoy with Vietnamese lemongrass chicken and foods that are marinated in lime juice. This mineral-driven wine pairs well with anything from the ocean or eaten near the ocean.
Vineyard Notes: The Colombard comes from Ricetti Vineyard in Mendocino County; planted in 1948; certified organic; dry farmed on loam. The Roussanne, Marsanne, and Muscat come from The Urban Edge Farm in Contra Costa County; certified organic, sandy soils.
Vinification Notes: Roussanne, Marsanne, and Muscat are all tumbled in the press to get just a hint of skin contact before pressing. Then they co-ferment on their lees in stainless steel. The Colombard ferments on its lees in stainless steel. The wines are racked, blended, and bottled after 6 months. The wine is unfined and unfiltered. Total sulfites equal 29 mg/L.
