Comprising the bulk of their production, Giovanna and Stefano’s Pācina Rosso was first produced in 1987, and it has long eschewed the Chianti Colli Senesi designation to which it would hypothetically be entitled.
Vineyard Notes: Fruit is harvested by hand from various gently-sloped parcels surrounding the domaine in Castelnuovo Berardenga. The vines average 35 years old, with the oldest planted just after the Second World War. Yields are controlled through severe winter pruning and debudding.
Winemaking Notes: Following total destemming, varieties co-ferment spontaneously in concrete tanks. Cuvaison lasts 30 days. Malolactic fermentation occurs spontaneously. The wine is aged for 14 months in neutral oak barrels, remaining on its fine lees until assemblage prior to bottling. The Pācina Toscano Rosso is bottled without fining or filtration and with minimal SO2 added.
Tasting Notes: 2014 was a challenging vintage overall in Tuscany, although one would never know it from this wine, which is stunningly concentrated and vivacious. Dark, boisterous fruit combines seamlessly with a soaring acidity ever so slightly treble-boosted by immaculately tasteful volatility, and the tannins possess a scrumptious sizzle. This beautiful, soulful, evocative wine displays amazing balance, and will surely live for a very long time.
