Vineyard Notes: The Grenache, Syrah, and Carignan grapes are sourced from three separate terroirs: the stony silex-infused plateau of Saint Hippolyte, the silex dominated soils of the hill of Piniere in Aubignan, and the clay-limestone mix in the soils of the commune of Barroux.
Winemaking Notes: All parcels are harvested and vinified separately. Clusters are 100% destemmed, followed by a 16 day maceration with daily pump-over and punch-down. Fermentation occurs spontaneously with indigenous yeast in concrete tanks. The wine is aged for 18 months in concrete vats. The final Ventoux Rouge blend is created before the bottling, which occurs prior to the next year’s harvest. Sulfur additions at bottling are kept to a minimum.
Tasting Notes: Fenouillet's red wine from the Côtes de Ventoux highlights the balance and depth that the wines of the Southern Rhône can achieve when allowed to speak for themselves. Unencumbered by new oak or grapes picked at the very limits of ripeness, its tart profile is supported on a base of minerality and acidity. Its three terroirs, two of which host significant deposits of flint, bring power and notes of spice.
