Vinification Notes : Whole clusters (stems intact) were foot tread and loaded into the press to macerate overnight before being pressed in the morning. The juice fermented and aged in neutral tanks for 6 months. It was bottled unfined and unfiltered.
Sulfites: Free SO2 < 2 mg/L, total SO2 9 mg/L
Vineyard Notes: The Nero d'Avola comes from Benson Ranch, Ukiah, Mendocino County and consists of 14-year-old head trained, dry farmed vines. The vineyard is farmed according to organic principles without the use of pesticides, herbicides, and synthetic fungicides.
Tasting Notes: This rosato smells like mineral earth and strawberry rhubarb. It tastes like watermelon candy and early season strawberry on the finish.
Serving Notes: Serve cold; take it out of the fridge for 20 minutes before drinking. We love starting this wine cold-ish and enjoying it as it warms up.
