"Sometimes, it’s best not to mess with tradition, and this wine is a hallmark example. Crushing of the Trebbiano grapes at this winery is done by foot, just as founder Emidio Pepe has always believed necessary. 'Nonno [grandfather] thinks this allows a constant stimulation of the skins with the juice, which releases a lot of texture and flavor for the wine that otherwise we would have lost,' says general manager Chiara De Iulis Pepe.
This is distinctive; as it is not filtered, the wine has a cloudy appearance in the glass. Chiara also notes the 'austerity and sharpness of a young Trebbiano'; clearly this is a wine that needs time to evolve. The acidity of the Trebbiano grape combined with the painstaking care of the Pepe family guarantee a white with great cellaring potential." - Tom Hyland
About Trebbiano: Trebbiano is an ancient grape variety from Abruzzo. It is an elegant and refined wine with great aging potential. Its beautiful acidity, together with the aromatic balance, makes it a fine wine with complexity at the same time. The proximity to the Gran Sasso Mountain guarantees big temperature differences between night and day, which encourages the development of the flavors. The proximity to the Adriatic Sea sea breezes provides an important mineral tone and a beautiful sapidity to the Emidio Pepe Trebbiano.
Winemaking Notes: Harvest is done by hand with strict grape selection; they pick in different phases to select bunches of grapes according to their ripening. Grapes are crushed in a wooden vat by foot. No additives or sulfites are added, and the must undergoes natural, indigenous yeast fermentation in glass-lined cement vats. After fermentation, the wine ages for roughly six months prior to being bottled. The Trebbiano is bottled by hand without filtering. Rosa Pepe, the family matriarch, decants and rebottles every single bottle in their cellars to take out the deposits which have formed naturally during the aging process.
