2020 Vintage Notes: It was a near perfect vintage, both for quantity and quality. The young buds pushed out their tender shoots without any danger of frost. Flowering took place without any rain washing off pollen. The summer was warm with cool nights. These conditions provided delicious grapes with plenty of sugar and flavor along with lip smacking acidity that gives the wines levity, freshness, and structure.

Wine Notes: This wine is patterned after the lovely white wines of the Graves district of Bordeaux. The Semillon is a bit later ripening than Sauvignon Blanc, but the flavors were so lovely that Wyncroft harvested both grapes at the same time in 2020. The blend is 75% Sauvignon Blanc with 25% Semillon, which gives viscosity and weight to the light, bright, and austere Sauvignon Blanc. The wine has a luminous pale straw color with a glint of chartreuse in the sunlight. Fragrant white peach and sweet grapefruit aromas lead into a zingy refreshing palate of crisp apple, Bosc pear, and white grapefruit. The finish lingers with a mouth-coating sweet/tart melange of Honey Crisp apple, white passion fruit, and citrus peel. About five seconds after one swallows, a savory aftertaste from the Semillon appears reminiscent of a fine sake.

Pairing Suggestions: If there is a finer wine to pair with the wonderful Lake Superior whitefish, please tell us! Ditto for Walleye. The naturally high acidity of this wine cleanses and refreshes the palate after a bite of these local delicacies dripping with butter. It is perfect for spring risotto with wild asparagus tips and buttery morels. It is divine with wild ramp vichyssoise.
