About Retsina: The New York Times: Great Retsina, an Oxymoron No More
Retsina is a traditional Greek wine made with the addition of resin from Aleppo pine trees. The style can be traced back to the early days of winemaking, originating in the process of using resin to line and seal terracotta amphora. In modern times, however, retsina has become associated with cheaper wine that comes in a big clear bottles with a crown cap (think Olde English for broke Greek college students).
In recent years, as Eric Asimov notes, retsina appears to be undergoing a renaissance. "A trickle of producers is demonstrating that if retsina is made thoughtfully and carefully, from grapes grown conscientiously, it can be a delicious wine that goes beautifully not only with a wide variety of Greek foods, but with many other assertive cuisines as well."
Vineyard Notes: Roditis grapes are harvested by hand from 40 year old, organically farmed vines.
Winemaking Notes: Fermentation occurs spontaneously in old oak barrels with indigenous yeasts. The wine is aged in old oak and is bottled without fining or filtration and with minimal S02 added.
