Winemaking Notes: The Mascarellos practice natural viticulture and prune to limit yields. All harvesting is by hand. No chemical pesticides or fertilizers are employed in the vineyards. Winemaking shows the utmost respect for tradition and the terroir – simple fermentation with the native yeast and long aging in large, neutral barrels. The fruit is sourced from Toetto in Castiglione Falleto, with an average yield of 30-35 hl/ha. The fruit is fermented for 7 days with floating cap, then aged 15-18 months in medium-large casks. Average production size is 200 cases.
About Freisa: Freisa is a red grape variety from the Italian region of Piedmont. It is responsible for two quite different types of wine, from two separate clones. The first style, usually made from the Freisa Grossa clone, tends to be light and fruity, often made slightly sparkling and with a little residual sugar. The second, rather more serious style of wine is made from the Freisa Piccolo clone. This style is usually fermented to dryness and is completely still, has good body, violet and raspberry fruit flavors, good tannin and acidity and is capable of aging for up to 10 years.
