Winemaking Notes: Fermentation occurs spontaneously with indigenous yeast; Cinsault ferments in stainless-steel tanks, País ferments in cement. Malolactic fermentation occurs spontaneously during the spring. The 'Zorrito Salvaje' is aged in stainless steel and is bottled unfiltered.
Tasting Notes: The 'Zorrito Salvaje' presents with purple and red ruby highlights in the glass. The nose is pungent and fruity, predominately marked by red berries. This is a warm, ripe and highly gluggable wine with well integrated acidity that lends for a fresh palate. Tannins are delicate and round. Pair with beef soup and stew, cheese plates and chocolate.

"A wine I had not encountered before, the 2016 Zorrito Salvaje is a blend of equal parts of Cinsault from Coelemu in Itata and País from Cauquenes in Maule. It's a juicy and unoaked red from old vines with no corrections whatsoever. I found ripe fruit aromas with notes of iron, a little herbal with something earthy. 4,000 bottles were filled in July 2016."
