Terroir Notes: The diurnal shift in Liguria allows the Pigato grape to retain impressive acidity, which is what makes this wine so lovely and crisp.
Winemaking Notes: The Pigato grapes are manually harvested. Once at the winery, the grapes are put into the press and left overnight. Part of the harvest is pressed the next day while part continues to macerate for 42-72 hours. Ambient yeast are used for fermentation. The macerated wine is pressed and moved into untoasted acacia barrels (1st, 2nd, 3rd-use). Fermentation continues in the barrels with weekly lees stirring for about four months. The skin contact imparts a good body while the bâtonnage imparts a creaminess and baking spice flavors. The wine matures in stainless steel until ready for blending. No sulfites are used during fermentation.
Tasting Notes: This Pigato white wine is exuberant and aromatic with notes of spice, honey, flowers and mustard seed. Cascina Praié has produced a dry, harmonious wine that is rich in texture with lovely mineral hints on the finish. There is no mistaking this wine as anything other than Pigato from Liguria.
