Vernaccia di San Gimignano is the great white wine of Tuscany, if not all of Italy. Vernaccia is said to be the red of white wines: the grapes may not yield highly fruited bouquets, but the wines are vigorous and long-lived. They are mineral wines of great power and structure that display excellent aging capacity, with their bouquets gaining interesting secondary aromas with the passage of time in bottle.
Terroir: Around 4 million years ago, San Gimignano was submerged by the Ligurian Sea. Thus, the Pliocene soil is filled with marine fossils and clay; the mineral composition is perfect for great white wines.
Winemaking Notes: Elisabetta Fagiuoli produces three distinct Vernaccia wines. The same bunches, depending upon how they are fermented, will yield different structures and flavors, making for different wines that do share a common identity. Fiore is essentially Elisabetta's Vernaccia sashimi. It is produced from the free-run must, which expresses the terrific elegance and finesse of the grape. The must flows naturally from the grapes that break because of the pressure of those above them in the press. It ferments in stainless steel tanks and ages long on the lees to gain roundness and persistence. The 'Fiore' is aged in bottlee.
Tasting Notes: The bouquet is rich and elegant, the palate round and persistent. Pair with appetizers, steamed fish and white meat dishes.

"The 2019 Vernaccia di San Gimignano Fiore offers yellow flowers, orchard fruit, dried flowers, almonds and tangerine peel. Varietal notes are given an extra kick of richness, yielding a Vernaccia with lovely mid-palate creaminess and light tropical accents, both of which add character. The 2019 is beautifully done."

"Aromatic, boasting chive, lemon, almond and rye toast aromas and flavors. Tense and lively, with a tactile feel on the long, toasty finish. Drink now through 2024."
