    I used this LaDona at a recent event at the Soho branch of The Wing. I love it, so was happy to see it be a crowd pleaser. This is a sparkler made in the tradition of refermented wines of Emilia. It’s whole cluster fermented with three days of skin contact, then some frozen must from the harvest is introduced to restart the fermentation under crown cap. I gave the wine to The Wing crew to write their own notes. Some of the comments? "Smells and tastes like sour beer. Tastes like a peach. Salty at the end. Nostalgia of summers past. Makes me want to keep drinking it." Their notes were spot on.
