Vineyard Notes: Seeking extreme ripeness, the harvest is done entirely by hand and proceeds in successive passes over a series of weeks in October.
Winemaking Notes: The Semillon fruit was sorted by hand. Fermentation occurred spontaneously with indigenous yeast in concrete tanks. Wine was aged in 50% tank and 50% barrels (30% new). Following an 18 month elevage, the wine was bottled for a minimum of 6 months in the bottle. The wine is not fined and is only lightly filtered before bottling.
Tasting Notes: This dessert wine is frequently blessed with significant levels of botrytis and exhibits a high level of concentration and complexity.
