Vintage Notes: Fall 2013 was long and warm, which ripened the grapes to spätlese level with about 20 percent noble botrytis forming. Jim Lester decided to risk about 3 tons of the grapes by hanging them in hope of an early freeze. What he didn’t expect was the now infamous “Polar Vortex” winter ahead. Needless to say, he got frozen grapes!
Harvest Notes: On the morning of January 2nd, 2014, a hardy crew of pickers brought in the three tons of brown frozen marbles at 7 degrees above zero. Snow was blowing sideways off Lake Michigan that day! The grapes were rushed into a special ice wine press borrowed from a nearby colleague, and three bars of pressure were applied. After a while, a stream of what looked like honey started to drip into the bucket under the spout. This went on for two days until all three tons were pressed, keeping the remaining waiting grapes outside where the temperature remained in the single digits, allowing them to stay safely frozen.
Winemaking Notes: The viscous nectar measured 40.7 brix. Jim chose a very hardy strain of yeast to ferment as the high sugar content is a challenge for all but the strongest yeast. The fermentation went on all winter and finally stopped by itself in April, leaving 26% residual sugar.
Tasting Notes: The wine is golden green with an exotic nose of honeyed peach and apricot and a touch of lychee fruit. The palate is unctuous, thick, and creamy with an amazingly dense flavor profile of honey-dipped apple and candied apricot, accented by crisp acidity. In spite of its richness, the wine remains elegant and refreshing--in perfect balance.
