Winemaking Notes: The grapes are harvested by hand with great attention to only picking the best bunches. Both varieties are picked at the same time. More sorting is done back at the winery. The grapes are gently destemmed into an open top fermenter and then co-ferment with native yeast. John Coltrane’s A Love Supreme is played on loud speakers directly into the tank. After a year in 3-year-old French oak, the wine is gently racked and aged for perfect enjoyment in bottle before release.
Tasting Notes: There are tons and tons of freshly picked, bright red raspberries. A string of earthy, leathery notes runs through the wine with a very soft and silky, yet intense, finish. This is the absolute ideal wine for hunks of baby lamb off the barbecue.
