Winemaking Notes: Work in the winery is done according to the lunar calendar. Harvest is manual. The grapes are entirely destemmed. The wines are created without any added sulfites, sugars or yeast during the fermentation process. Wines mature for 24 months in oak with regular stirring in the barrel scheduled according to the lunar cycle. Emilien spends a year in 50hl foudres before a year in 228L barrels. The wine is neither fined nor filtered before bottling, which takes place in the middle of the lunar cycle. Emilien is the estate’s most important cuvee in terms of volume.
Tasting Notes: Ripe red fruit aromas are dominated by blackcurrant and redcurrant. Expect accents of roasted almond and occasional hints of mushrooms and undergrowth. On the palate, this full-bodied Bordeaux showcases fine, velvety tannins. It is a seductive wine of great elegance and finesse. Emilien has superb longevity and can age for several decades at which time it will reveal its full depth and terroir character.
