Harvest Notes: Grapes are manually harvested; sorting is done on the plot and in the winery.
Winemaking Notes: Grapes are directly pressed into aged oak barrels of 350-liter size for fermentation and maturation. Grapes mature on the lees, without sulfur or stirring, for 16 months. Wine is racked before being bottled without fining or filtration.
Tasting Notes: Santenay is the most southern white of the Côte d'Or. This wine has a lot of finesse and flexibility. The stony soil shows with traces of minerality on the palate. There is beautiful length on the finish. Pair with creamy dishes like fish couscous, pasta or risotto with mushrooms, and poultry in a cream sauce. Cheeses to try are Comté, Beaufort, and goat cheeses.
