About the Name: Pippin is an old word for apple. It was also used to describe someone or something that is excellent. We think this cider is pippin indeed!
About the Cider: Several different fermentations were blended to produce this cider. Some fermentations took place in barrels, some in oak tanks and some in stainless steel tanks. One of the lots had stopped on its own; this lot was used to add volume on the palate. Another lot had a whiff of wild fermentation, which helped to add great complexity. The rest of the lots were chosen for their aromatic and textural contributions. In addition to different lots, different vintages were used for the 'Henry Pippin's' Apple Cider. A solera method blending maintained a complex profile in the cider, combining the freshness of a new fermentation with the aged mellowness that only time brings.
