About the Wine: This Champagne is a blend of two successive vintages, made exclusively from Chardonnay grown on the Grand Cru rated slopes of the village of Cramant and aged for a minimum of 36 months. The wine expresses exceptional finesse and delicacy as well as the piercing chalk-like minerality and high-toned aromatics of this remarkable Grand Cru. About Champagne: Champagne is the world’s leading sparkling wine region and, indeed, creates one of the products with the most name recognition on the planet. The region’s wild success began, however from accidental beginnings: because of the cold weather, fermentation would often prematurely stop (yeast are very sensitive to temperature), leaving live yeast still in the bottle. When the weather warmed again in spring, the yeast would reactivate, creating carbon dioxide, and often many broken bottles. In the last half of the seventeenth century, with the help of Dom Perignon and improved bottle-making technology and corks, sparkling wine could, for the first time, be harnessed and enjoyed intentionally. To this day, the painstaking winemaking method--which involves a dosage of sugar and liqueur to reinitiate fermentation; bottle aging on the spent yeasts; and careful riddling, or hand-turning, of the bottles to remove the yeasts--sets the standard for many of the world’s sparkling wines. Made from Pinot Noir, Chardonnay, and Pinot Meunier grown in the region’s chalky soils, Champagne is truly a world-class phenomenon.
