Domaine du Jaugaret's Saint-Julien is a field blend from the estate's mere 1.3 hectares of vineyards. All the grapes are usually harvested in one or two days. The grapes are placed into a small press and manually crushed. The cuvaison is long, frequently extending three weeks or more. The wine is then racked into small barrels (only a minor percentage of which are new) to complete the malolactic fermentation. The wine is left to age in a small, damp underground cellar with minimal racking for approximately thirty months. The wine is not filtered before bottling. The wines of Jaugaret, relying so extensively on Cabernet, are built to last.
2011 Vintage: The 2011 vintage bottling lists Vin de France instead of Saint-Julien. In this tragic moment of standardization, the most "typical" of Saint-Julien wine is threatened by being denied the right to claim its origin as Saint-Julien! Jean-François Fillastre, the current proprietor, follows traditional methods to produce his wine. Monsieur Fillastre refuses to "modernize" to satisfy the new "normal." Thus, for those who love and admire Jaugaret, the names of Fillastre and Jaugaret will remain synonymous with Saint-Julien. Please note that 2012 does have the Saint-Julien appellation on the label.
