Winemaking Notes: The Chardonnay grape, gathered from the Crevoglio and Pian Muciot vineyards, gives origin to a sparkling wine with a second fermentation in autoclave (long Charmat method with 6 month on the lees). After the grape harvest, which is normally done in the middle of September, the wine ferments under controlled temperatures. They then add grape must and yeast for the secondary fermentation during the first days of the year following the vintage. This important and crucial phase will continue for 15 days at a temperature between 17° and 18°C; later on the product, which is now sparkling wine, remains still in the autoclave to mellow on the fermentation lees. After a period of around 6 months, the wine is ready to be bottled. The Chardonnay Brut remains for another 30 days in the bottle for a better maturation and refinement before release to the market.

Tasting Notes: The visual aspect shows a creamy wine with fine foam and persistent effervescence; its bright straw yellow color gives anticipation to a marked and delicate aroma, and an intense, deep and harmonious taste. The nose suggests citrus fruit, almonds and the aromas of freshly baked bread. On the palate this wine shows a wonderful lingering and elegant character. It is without doubts a brut sparkling with its own character and a winning nature, which doesn't lose the noble and generous personality of the Chardonnay grape. It is excellent as an aperitif, with fish or preferably fresh cheeses. Try with warm hors d'oeuvre made of vegetables and puff pastry.
