Winemaking Notes:
From several small parcels of Pinot Noir, which Cédric cultivates with his father, he produces 750 cases of a cuvee he calls “Inflorescence.” He debuds the vines in the spring to reduce the crop as well as carrying out a green harvest in summer if necessary to further reduce the yields. The soil is worked to favor the development of deep growing roots and to avoid the use of any chemical weed killers. The grapes are harvested by hand. Once harvested, the grapes are squeezed three times; only the first press is kept, which is the best quality and has the richest aroma. After the fermentation, the wine is not filtered but purified with the old method of natural purification. After, the wine stays on average three months in vats before bottling. The bottles are thus stacked in a round-shouldered cellar and kept at the average temperature of 10 degrees Celsius. Bottle fermentation takes place in about two months, the time necessary to obtain the beautiful bubble, which is very fine and of high quality. Bottles stay in the cellar until disgorging.

The NV (2004) Blanc de Noirs Inflorescence La Parcelle is a huge, powerful wine bursting with red berries, spices, flowers and licorice. All of the elements come together gracefully in a dramatic, large-scaled wine of incomparable class and elegance as layers of fruit float across the palate. La Parcelle emerges from a parcel of 35 year-old Pinot vines in Cote de Bechalin, a lieu-dit in Bouchard’s hometown of Celles-sur-Ource. This is the first vintage of La Parcelle that Bouchard made from start to finish. Prior releases had been produced by the previous owner of the vineyard. If there is such a thing as a value wine in the lineup, this is it. Disgorged April 2011. Anticipated maturity: 2012-2016.
