Winemaking Notes: From several small parcels of Pinot Noir, which Cédric cultivates with his father, he produces 750 cases of a cuvee he calls “Inflorescence.” He debuds the vines in the spring to reduce the crop as well as carrying out a green harvest in summer if necessary to further reduce the yields. The soil is worked to favor the development of deep growing roots and to avoid the use of any chemical weed killers. The grapes are harvested by hand. Once harvested, the grapes are squeezed three times; only the first press is kept, which is the best quality and has the richest aroma. After the fermentation, the wine is not filtered but purified with the old method of natural purification. After, the wine stays on average three months in vats before bottling. The bottles are thus stacked in a round-shouldered cellar and kept at the average temperature of 10 degrees Celsius. Bottle fermentation takes place in about two months, the time necessary to obtain the beautiful bubble, which is very fine and of high quality. Bottles stay in the cellar until disgorging.
