Winemaking Notes: Harvest is done by hand. Grapes are pressed softly into stainless steel for fermentation at low temperatures. Fining agents are not used. Malolactic fermentation is stopped.
About Verdicchio: The Marche is the land of Verdicchio. The best expressions of Verdicchio hail from the DOCs Castelli di Jesi and Matelica. The Matelica DOC is located further inland than Jesi, producing a firmer, more aromatic, and slightly more powerful version of Verdicchio. It shows fine balance and structure and has great complexity when aged for several years. As with the Jesi wine, it is the perfect partner to seafood and baked pasta. Collestefano is considered among the best producers of Verdicchio; he is one of the few producers to win for two years in a row the Tre Bicchieri award for vintages 2015 and 2014.
"Verdicchio is one of the most versatile grapes in all of Italy. It can be vibrant and remarkably fresh, or crafted in a more serious style with the potential to mature for upwards of a decade. When harvested late, Verdicchio takes on textural depths and ripeness that balance wonderfully against naturally high acidity. Oak? It can handle that too, while still communicating purity. No matter what the expression, Verdicchio almost always makes a killer wine, and yet it still does not get the full attention it deserves." - Eric Guido, Vinous 9/2020

"I’ve become a big fan of Verdicchio di Matelica, and of this wine in particular. The Matelica zone, in the Marche region of Italy, is farther inland and higher in elevation than the coastal Castelli di Jesi zone, a better-known area for verdicchio. This wine, made from organic grapes, is strikingly energetic, with whiplash acidity and saline, mineral and herbal flavors. It would be superb with numerous summery pastas, whether white clam sauce, pesto or fresh tomatoes."
