Vintage Notes: The 2009 cycle began with a rainy autumn and winter. There was lots of rain during the months of March and April. The dry spring favored a slow and healthy vegetative growth. In the month of July, 41 liters rained down, helping the plant at this critical moment and slowing maturation. A dry and hot August provoked a fast, healthy and quality harvest. The cycle 10 days longer than usual was ideal to promote optimal maturation with great natural acidity.

Vineyard Notes: Xarel-lo and Bastard Negre are co-planted in the 1.92-hectare Clos del Serral plot. The vines were planted in 1954. The plot is dry farmed without any machinery. Hispanic Breton horses are used for plowing.

Winemaking Notes: The grapes were manually harvested using 15 kilo baskets. Then they are further sorted grape by grape by hand. Fermentation occurred with the yeast indigenous to the vineyard in stainless steel and cement. Fermentation lasted 15 days. The wine aged in tank for 17 months before being bottled. Then, the wine aged horizontal on its lees for 100 months. It was disgorged without the addition of sulfites.

    Rating: 99 (3/5/2021)

The most refined Spanish sparkling wine I have ever tasted. Despite being aged 17 months in vat and 100 months in bottle, it shows pristine fruit, intriguing stone aromas and racy freshness. Delicate texture; layered flavors linger on the palate. Sourced from an old vineyard with Xarel-lo and Bastard Negre (a local biotype of Graciano). A top terroir biodynamic wine and a masterwork. Drink 2021-2039.

Sporting a burnished limpid straw hue, the 2009 boasts an electrifying bouquet laced with scents of orange rind, sea spray and oyster shells - the marine-like aromas intensifying with aeration. The palate delivers exquisite harmony and the tension that would embarrass many a self-aggrandizing Champagne. There is so much energy coiled up in this cava, with a glorious saline edginess on the finish that urges you back for another sip (and another and another.) This cuvée is not inexpensive and is very limited in quantity, but it is also unequivocally sensational. It will drink well for maybe 15 to 20 years
