Vineyard Notes: Grapes are harvested from Istine's three estate vineyards: Istine, Casanova dell'Aia, and Cavarchione. The grapes are manually harvested and sorted in the vineyard.

Winemaking Notes: After the vinification in separate tanks for each vineyard (about 1 year later), the wines are tasted to select the quantities destined to be bottled as Istine vineyard crus (Vigna Istine, Vigna Casanova dell'Aia and Vigna Cavarchione) and those destined to become Riserva Levigne, which represents the best expression of every specific vintage.

Fermentation: Around 15 days in concrete tanks at a controlled temperature
Maceration: Submerged cap maceration for 45 days in concrete tanks at a controlled temperature
Malolactic: Yes, in concrete tank
Aging: The single vineyard wines are aged separately for 12 months in 20hl Slavonian oak casks. Then, once blended, they age for 12 more months in a 30hl oak casks and then at least 12 months in the bottle.

"Made with certified organic fruit, the Istine 2016 Chianti Classico Riserva Levigne shows some dried fruit and some delicately aged aromas with cassis, tar, licorice and crushed rose. The fruit feels a bit flatter than I might have expected for this classic vintage, but the wine is nicely direct and linear nonetheless. This is a good choice for near-term consumption with a sirloin and potatoes."
