Domaine Houillon produces wild wines that still possess the depth and southern Rhône intensity from the classic grapes of the region (Syrah, Grenache, Cinsault). And, in a nod to just how artisanal and hand made this project is, some of the labels are made from their own papyrus they are screening from scratch in their barn!

Winemaking Notes: Syrah and Grenache Noir grapes are harvested by hand from organically farmed vines planted in the 1990s. The harvest is entirely destemmed and fermentation occurs spontaneously with indigenous yeast in a combination of stainless steel and oak. The wine is aged for around 14 months in stainless steel vats. The 'Indigo' is bottled without fining or filtration and with no added SO2.
