Vineyard Notes: Fruit is harvested by hand from biodynamically farmed vineyards planted between 2005 and 2008.
Winemaking Notes: After harvest, a cold skin maceration occurs for a 2-3 days of days. La Collina uses frozen grape must to help kickstart the fermentation naturally in stainless steel tanks. The wine is bottled in February, and a natural re-fermentation occurs in bottle.
Tasting Notes: This is a dry, lively sparkling wine with notes of ripe fruit and red berries.
