Winemaking Notes: The grapes were manually harvested. The Grüner Veltliner macerated on the mash for 10 hours; gentle and slow pressing occurred over 8 hours. Spontaneous fermentation took place in wooden barrels; no temperature control. The wine matured on the lees without SO2 for 12 months (hence the wine name) in 700-liter acacia barrels made from the estate forest. No additives were used as time is the most important factor to give the wine its balance.
Tasting Notes: Acacia blossoms and a touch of lees show on the nose along with spicy aromas of tobacco and sandalwood. The wine is full-bodied and playful. Built to last, the finish is long and dry. It should age incredibly well.
