Tasting Notes: One of the more rigorous and stony Grüner Veltliners out there, this is something of a revelation of Grüner and granite. It is mineral and stony, and the austerity wraps around an exotic ripeness of juicy and textural fruits showing the vintage’s character. Because of the dry vintage, many of the berries were dehydrated and the wine does show an impressive density and compactness. If the Chaos Weiss is the more textural and lavish wine, then this is the rigorous beauty.
Winemaking Notes: The Dekonstruction Grüner Veltliner was sourced from two small vineyards in Obermarkersdorf totaling around 0.34 hectares. The production was only 700 liters in 2018. The wine has been made the same way the last few years: foot-stomped in open-topped barrels and left on the skins for about two weeks. After this, it was pressed directly into steel. It was bottled unfined and unfiltered with around 20pm S02 at bottling.
