Soil Notes: The grapes are grown on clay topsoil from continental erosion with carbonated substrate of marine origin with a large amount of fossils.
Viticulture Notes: The Raventós practice biodynamic farming. This bottling is certified organic. Vineyards have spontaneous plant cover, which fosters biodiversity, fertility and life in the soil. Compost from the animals on the estate is used. Plant infusions are used as phytotherapy to minimize the use of copper and sulphur. The European grapevine moth (Lobesia botrana) is controlled by sexual confusion. Harvest is manual.
Winemaking Notes: The grapes are processed using a gravity system, and the pressing is slow with low pressure. The primary fermentation occurs in stainless steel vats at a controlled temperature using the yeast native to the vineyard. The Macabeu and Parellada are pressed and fermented separately. The Monastrell and Xarel-lo are pressed and fermented together. The red Monastrell grapes provide color and complexity to the De Nit Reserva Rosado. The wines are blended for second fermentation in bottle. No malolactic fermentation occurs. Raventós De Nit ages for a minimum of 18 months. The tirage sugar is organically certified cane sugar. The expedition liquor is the base wine of De Nit 2018 with organic sugar. The disgorgement date is listed on the back label.

"This is their signature rosé, with the soul of a white. It keeps all the character of the place and has a little bit of color, very little—it's extremely pale, and some could say it's a white. It has the dry, austere and direct palate of all of these wines, a dry and tasty palate. 2016 seems like a superb vintage for this bottling."
