About this Wine: Subliminal is a partnership between the Parientes (Nomadic Distribution) and the Porters (Amplify Wines). Born out of a shared desire to capture a style of Cabernet Sauvignon almost forgotten in California- that of a humble table wine- Subliminal is a weeknight wine that speaks strongly of its origins.
Vineyard Notes: The Cabernet Sauvignon comes from vineyards in the Santa Ynez Calley, from vines planted in 1972. Rancho Arroyo Perdido Vineyard (sustainably farmed), Giff's Vineyard (sustainably farmed) and Cinque Stelle (organically farmed).
Winemaking Notes: Maceration lasted for two weeks in neutral oak. The fermentation occurred naturally with native yeast in concrete tank. The wine spent 6 months in barrel and aged in 100% neutral French oak. It is not fined or filtered. No additions were made other than sulfites. 30 ppm were added after malolactic fermentation, and 20 ppm were added at bottling.
Tasting Notes: This wine's dusty tannin and dried fruit recall 1970s California, while it's bright, fresh, lifted character is a purely modern take on the grape. This is a new side of California Cabernet Sauvignon that will carry you from summer BBQs to winter braises.
